1 x 125g José Herman Salazar (Colombia)
Several years ago Salazar discovered cherries on his farm with a distinct chilli pepper scent and delectable taste. Named Aji, this coffee has since ranked high in the Cup of Excellence competition. Enjoy expressive citrus acidity, blackcurrant, caramel and spiced biscuit.
1 x 125g Simon Brown and Merlith Cruz (Peru)
Simon Brown and Merlith Cruz’s farm, Los Ethiopes, focuses on Ethiopian varieties and innovative processing methods. This heirloom coffee was fermented in a bioreactor with mosto, revealing notes of lush blueberry and jasmine with overtones of cardamom.
Why This Coffee Tastes So Delicious
Of course, all coffee originally came from Ethiopia, but most coffee we consume comes from plants that have been bred to increase yield and disease resistance. Because of its genetics, despite being grown in Peru or Colombia, these coffees flavour profiles are more akin to Ethiopian coffees. We’re finding more and more genetically-Ethiopian coffee being grown in Central and South America, especially in Peru and Colombia. It’s a compelling trend from a flavour standpoint because it begs the question, how much of a coffee’s flavour comes from where it was grown—its terroir—and how much comes from its genetics?
